Recipe of the Month

Thai Seitan Sate’

Sates are a traditional Thai “BBQ”

Ingredients:
1 lb seitan – sliced thinly
16oz coconut milk or ½ cup coconut + 2/3 cup H2O blended
3 Tablespoons soy sauce
3 Tablespoons lime juice
2 Tablespoons sugar
4 cloves garlic
1” ginger
1 teaspoon turmeric

Soak skewers 1 hour before you begin.  Heat oven to 375degrees.  Blend all ingredients in blender except the seitan.  Pour over seitan and let sit 15 minutes.(You can marinate overnight if you have time). Skewer 2 pieces of seitan on each skewer.  Put skewers on a baking sheet.  Pour extra coconut sauce over seitan.  Bake for 12 minutes.  Turn over skewers and bake another 5 to 7 minutes.
Serve seitan on top of Aromatic Jasmine Rice.  Pour any extra sauce from sheet pan over the seitan and rice.
